<li> For the tomatoes, cut in thin slice from the bottom and the top of tomatoes. Scoop out pulp and drain the inside.</li>
<li>Mix the cheese, red pepper, carrots the chopped cucumbers and the seasonings in a large bowl.</li>
<li>Fill the cucumbers slices and the tomatoes with 1 teaspoon of the cream cheese mixture.</li>
<li>Place in the fridge for 1 hour. Serve cold.</li>
