Recipe: Lemon Rice Soup: light, perfect balance flavor

Summary: This soup is a quick way to make and still has the ferfect tasty flavor of a lemon rice soup.


  • 2 quarts chicken broth
  • ¾ cup rice or orzo
  •  2 eggs
  • juice of 2 lemons
  •  salt and pepper to taste


  1. Heat the broth, add rice and cook until tender. Remove from heat. Beat egg whites until stiff, and yolks and continue beating. Gradually add lemon juice and 1 cup of the broth to sauce while beating until temperatures are the same. Slowly add sauce to the rest of the broth and mix well. Keep the soup away from heat to prevent curdling.
