Recipe: PASTA SALAD WITH AVOCADO AND FETA CHEESE
Summary: THIS SALAD GOES WELL WITH GRILLED CHICKEN OR STEAK.
Ingredients
- 8 ounces penne pasta
- 1/2 cup vinaigrette
- 3/4 cup of each red and green bell pepper diced
- 3/4 cup crumbled feta cheese
- 1/2 cup chopped onions
- 3/4 cup chopped black olives
- 3 tablespoons chopped parsley
- 1 clove minced garlic
- 2 large freh hass avocados
- 1 tablespoon lemon juice
Instructions
Cook pasta until tender.Drain and toss with vinaigrette. Let it cool. Add the peppers,feta,onions,olives,parsley and garlic.Chill. Cut the avocados into chunks.Gently toss with lemon juice to avoid browning. Fold into salad and serve.
