Recipe: Squash Bisque: Rich, thick and flavorful.

Summary: Perfect soup for any autumn day.

Ingredients

  • 1 small onions, diced
  • 3 tablespoons butter
  • 2 ½ pounds firm butternut squash, diced
  • 5 cups chicken stock
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  •  1 teaspoon nutmeg
  • ½ cup half and half or cream

Instructions

  1. Saute onions in butter until soft. Add the squash and broth and simmer until squash is tender. Add the brown sugar and seasonings. Simmer for few minutes. Add half and half, do not boil. Puree mixture with submersion blender. Garnish with green onions and serve.

Cooking time (duration): 20 minutes
