Recipe: Vegetable soup: Very healthy and delicious.

Summary: This soup is delicious as is, but you can add any of your favorite vegetables.


  • 2 tablespoons butter
  • ¼ chopped carrots
  • ½ cup chopped onions
  • ½ chopped celery
  • 3 cups hot beef broth
  • 1 cup chopped tomatoes
  • ½ cup chopped potatoes
  • 1 tablespoon chopped parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1/2 cup chopped spinach


  1. Melt the butter. Add the carrots, onions and celery and cook for 4 minutes. Add the broth, tomatoes, potatoes, parsley, spinach, salt and pepper. Cover the pot, and cook for 35 minutes.

Cooking time (duration): 40 minutes
