Recipe: Cream Of Mushroom Soup
Summary: serve this soup with freshly baked french bread or with grilled chicken or steak.
Ingredients
½ pound sliced mushroom
¼ cup butter
1 tablespoon chopped onions
4 cups chicken broth
3 tablespoons flour
¼ teaspoon black pepper
¼ teaspoon fresh ground nutmeg
1 cup whipping cream

Lentil Soup Recipe

Ingredients
2 cups lentils
½ cup chopped carrots
½ cup chopped celery
4 cups chopped spinach or swiss chard
½ cup chopped potatoes
1/3 cup olive oil
7 cloves minced garlic
1 ½ teaspoon salt
½ teaspoon black pepper
1 teaspoon cumin
1/3 cup lemon juice
Instructions:
Boil the lentil in about 10 cups water, till half cooked. Add all the ingredients. Cook everything about 40 minutes.

Garbanzo soup with saffron

This thick soup is almost a stew, and makes a very satisfying vegetarian meal. It contains the orange sweet potato, grown in abundance in Querétaro, which the Center for Science in the Public Interest has named the most nutritious vegetable. If you don’t care for chile, don’t let that stop you from enjoying this soup, since it’s such a winner in terms of flavor, fiber and nutrition. Try using some smoked Spanish paprika instead.
