Summary: The glaze is so simple to make and add a wonderful flavor to the salmon.
- 4 (6 oz. each) fresh salmon fillets
- 5 oz. butter
- 2 tablespoons finely chopped red onions
- 1 cup good quality balsamic vinegar
- salt and pepper
- Sprinkle salmon with salt and pepper. Grill for 3 minutes on each side until done. Meanwhile, melt 2 oz. of the butter over medium heat. Add the onions and cook for 3 minutes. Add the vinegar and cook until reduced by two-thirds. Cut remaining butter and add gradually to the sauce, stirring until completely melted. Place salmon on plates and serve with the sauce.
