VEGERTARIAN MOUSSAKA LEBANESE STYLE

Recipe: VEGETARIAN MOUSSAKA LEBANESE STYLE
Summary: this moussaka is will taste better the next day.
Ingredients
- 1 large eggplant
- 1 large onion, chopped
- 5 ripe tomatoes
- ½ cup olive or vegetable oil
- 4 cloves garlic, crushed
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¾ cup water
Instructions
- Peel the eggplant and slice 1/2 “ thick pieces. Sprinkle with salt and let stand for 30 minutes. Wipe dry and fry in oil until golden brown. Peel the tomatoes and slice into ¾” slice thick pieces. Saute onions and garlic in the oil. Add the tomatoes and cook for 5 minutes. Combine the tomato mixture, eggplant, salt and pepper in a saucepan. Add the water and let simmer for 20 minutes. Serve hot or cold with pita bread.
