Recipe: Cucumbers and Tomatoes filled with veggie dip: colorful savory bite size appetizers perfect for the holiday season.

Summary: These are very healthy and tasty bite size treats that make a perfect appetizers for any occasion.

Ingredients

  • 2 large english cucumbers
  • 16 cherry tomatoes
  •  8 oz. cream cheese, softened
  •  1/4 cup sweet red peppers, chopped finely
  •  1 tablespoon finely chopped green onion
  • 1 tablespoon finely chopped carrots
  • 1 teaspoon garlic powder
  •  1/2 teaspoon salt

Instructions

  1. Peel some strips from cucumbers to leave a decorative edges.
  2.  Cut into 1/2 inch slices. Scoop some of the seeds from the remaining cucumbers slices.
  3.  For the tomatoes, cut in thin slice from the bottom and the top of tomatoes. Scoop out pulp and drain the inside.
  4. Mix the cheese, red pepper, carrots the chopped cucumbers and the seasonings in a large bowl.
  5. Fill the cucumbers slices and the tomatoes with 1 teaspoon of the cream cheese mixture.
  6. Place in the fridge for 1 hour. Serve cold.
