Ingredients
- 2 large english cucumbers
- 16 cherry tomatoes
- 8 oz. cream cheese, softened
- 1/4 cup sweet red peppers, chopped finely
- 1 tablespoon finely chopped green onion
- 1 tablespoon finely chopped carrots
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
Instructions
- Peel some strips from cucumbers to leave a decorative edges.
- Cut into 1/2 inch slices. Scoop some of the seeds from the remaining cucumbers slices.
- For the tomatoes, cut in thin slice from the bottom and the top of tomatoes. Scoop out pulp and drain the inside.
- Mix the cheese, red pepper, carrots the chopped cucumbers and the seasonings in a large bowl.
- Fill the cucumbers slices and the tomatoes with 1 teaspoon of the cream cheese mixture.
- Place in the fridge for 1 hour. Serve cold.
