FOOL MUDAMAS/FAVA BEANS (فول مدمس)
Summary: This is very popular dish served for breakfast, but you can have it also for lunch. Also spelled many other ways such foul muddamas or fool mudames.
Ingredients
- 1 ( 20 oz) can fava beans reserved ½ of the water
- ½ can chick peas
- ½ cup water
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- 1 teaspoon salt
- 1 teaspoon cumin
- FOR GARNISH:
- 1 tablespoon chopped parsley
- 2 tablespoons chopped tomatoes
- 2 tablespoons chopped onions
Instructions
- Boil the fava beans in water over medium heat for 10 minutes. Add the garlic, salt, cumin and lemon juice. Slightly mash the beans, add the chick peas, and simmer for 7 more minutes. Turn the heat off and add the oil and mix. Serve with pita bread plate and top with the garnish.
