Greek Spinach Pie (spanakopita)

Recipe: Greek Spinach Pie
Summary: This traditional greek spinach pie can be made in advance. Bake it when you are ready to serve it.
Ingredients
- 1 lb. Phyllo dough
- ½ cup butter softened
- 4 medium size onions, coarsely chopped
- ½ cup vegetable oil
- 1 package frozen chopped spinach
- 8 oz. small curd Cottage cheese
- ½ lb. Greek feta cheese
- 3 eggs lightly beaten
- ½ teaspoon salt
- 1 teaspoon black pepper
- ½ teaspoon freshly ground nutmeg
Instructions
Prepare the stuffing: Defrost the spinach in microwave and squeeze the liquid out very well. Cook the onions in the vegetable oil over medium heat until translucent. Let cool at room temperature. Add the spinach both cheeses, eggs, salt pepper and nutmeg. Grease a 13×9 pan with butter. Brush each sheet of the dough with butter until you finish with the half of the dough. Spread the stuffing evenly over. Top with the rest of the dough by brushing each sheet making sure to brush the edges and the layer too. Cut into 8 squares. Bake at 350 degrees for 15 minutes or until light brown.
