Recipe: WHOLE CHICKEN ROASTED
Summary: SERVE WITH RICE OR ROASTED VEGETABLES
Ingredients
- 1 whole chicken
- 4 cloves garlic, whole
- 3 onions cut in half
- ½ cup butter, softened
- 1 tablespoon salt
- 1 teaspoon oregano
- 1 teaspoon basil
- 3 cloves garlic, minced
- ½ cup olive oil
- salt and pepper to taste
Instructions
Mix the butter, minced garlic, salt, pepper, oregano and basil to form a paste. Stuff under the skin and inside the chicken with the butter mixture. Rub the outside with oil and the rest of the butter mixture. In a roasting pan , layer the whole garlic and the whole garlic on the bottom of the pan. Place the chicken on top. Roast in a 450 degrees oven for about 1 to 1 ½ hours or until the chicken is done. Serve with pita bread and garlic sauce.
