Recipe: Greek Walnuts Cake

Summary: My favorite authentic walnut cake recipe. this recipe comes from Cephalonia (Kefalonia), an island in the Ionian Sea.  Self-rising flour and results in a wonderful dark spice and nut cake soaked in a sweet syrup, topped with a sprinkle of more walnuts.

If you don’t have the time to bake, this recipe is very easy and it looks like you spend hours baking this cake.

Ingredients

  • 1 box yellow cake mix
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • ½ cup orange juice
  • ¾ cup milk
  •  4 eggs
  • 1 ½ cups chopped walnuts
  •  syrup

Instructions

  1. Heat the oven to 350 degrees. Grease a 13×9 inches pan. Beat all the ingredients for 2 minutes until well combined. Add the walnuts and fold Bake for 35 to40 minutes or until a tooth pick inserted in the middle comes out dry. Invert on a plate cool. Pour the hot syrup on the cake and wait a couple hours and serve.
  2. Syrup: 2 cups water 2 ½ cups sugar ¼ teaspoon lemon juice (you can omit the syrup to make easier and quicker)

Cooking time (duration): 30 MINUTES
