Ingredients
- 10 garlic gloves
- ½ cup olive oil
- ¼ cup lemon juice
- 1 teaspoon salt
- 2 teaspoons fresh black pepper
- 2 teaspoons oregano
- 6 green onions, sliced 13 oz. can artichoke hearts, cut into quarters
- 3 tomatoes, diced
- 2 cups Mushrooms, cut into quarters
- 8 oz. fresh spring mix greens
Instructions
- Preheat oven to 400 degrees F.
- Wrap garlic and olive oil in foil and roast for about 30 minutes, or until garlic is light brown.
- Remove foil and let garlic cool.
- In a small bowl, mash peeled garlic with lemon juice, oregano, salt and pepper to make the dressing.
- Toss greens onions, artichokes, tomatoes and mushrooms with ½ of the dressing. Let stand for 1 hour.
- Place the mix greens in a large bowl and add the rest of the dressing.
- Add the marinated vegetables. Serve immediately.
