Recipe: Mix Greens with Artichoke Hearts and Roasted Garlic.

  • 10 garlic gloves
  •  ½ cup olive oil
  •  ¼ cup lemon juice
  • 1 teaspoon salt
  • 2 teaspoons fresh black pepper
  •  2 teaspoons oregano
  •  6 green onions, sliced 13 oz. can artichoke hearts, cut into quarters
  •  3 tomatoes, diced
  •  2 cups Mushrooms, cut into quarters
  •  8 oz. fresh spring mix greens


  1. Preheat oven to 400 degrees F.
  2. Wrap garlic and olive oil in foil and roast for about 30 minutes, or until garlic is light brown.
  3.  Remove foil and let garlic cool.
  4. In a small bowl, mash peeled garlic with lemon juice, oregano, salt and pepper to make the dressing.
  5. Toss greens onions, artichokes, tomatoes and mushrooms with ½ of the dressing. Let stand for 1 hour.
  6.  Place the mix greens in a large bowl and add the rest of the dressing.
  7.  Add the marinated vegetables. Serve immediately.
