- 1 lb. Shredded dough
- 2 lbs. Sweet cheese (ricotta or homemade cheese)
- 1 ½ cups unsalted butter
- ½ cup sugar
- 1 tablespoon orange blossom water
- ¼ cup pine nuts
- ¼ cup pistachios, ground finely
- 2 cups attar (syrup)
- Mix cheese, sugar and orange blossom water. Chop the dough with a sharp knife. Over low heat mix the butter and the dough until the butter is all absorbed. In a large greased pan, sprinkle the pine nuts and 2/3 of the dough and press well. Spread the cheese mixture over the dough evenly. Cover with the rest of the dough. Press well. Bake at 400 degrees oven for 35 minutes. Add the attar and flip the tray over another tray the same size and bake for 10 more minutes. Remove from oven. Garnish with pistachios. Serve warm.
