Recipe: BEET SALAD
Summary: greek version, high in fiber,tasty and refreshing.
Ingredients
- 2 pounds fresh beets
- 4 tablespoons vinegar
- 4 tablespoons olive oil
- ½ teaspoon salt
Instructions
Scrub the beets and boil for a hour or until tender. Cool, peel and slice 1/8” thick. Season with salt, vinegar and oil.
