Summary: make this salad all year around with fresh beets.
- 2 pounds beets boiled
- 1/2 bunch parsley chopped fine
- 1 onion
- 2 teaspoons salt
- ½ cup vinegar
- ½ cup olive oil
- Cut the onion in rings and add salt and vinegar. Peel the beets, and cut in small pieces. Add the beets to the onion mix, and mix well. Garnish with chopped parsley.
