Ingredients
- 1 cup dry couscous
- ¼ cup diced dried apricots
- ¼ cup diced dried pineapple
- ½ teaspoon salt
- 1½ cups boiling water
- Garnish: fresh chopped mint.
Instructions
- In a large casserole, stir together couscous, apricots, pineapple and salt.. Pour boiling water over couscous and cover. Let rest until the liquid is absorbed, about 5 minutes. Fluff couscous with a fork and serve immediately. Garnish with fresh mint.
