Recipe: Couscous with apricot and pineapple: tropical twist makes a delicious flavor.

Summary: Very tasty, quick and easy to make.

Ingredients

  • 1 cup dry couscous
  •  ¼ cup diced dried apricots
  •  ¼ cup diced dried pineapple
  • ½ teaspoon salt
  • 1½ cups boiling water
  • Garnish: fresh chopped mint.

Instructions

  1. In a large casserole, stir together couscous, apricots, pineapple and salt.. Pour boiling water over couscous and cover. Let rest until the liquid is absorbed, about 5 minutes. Fluff couscous with a fork and serve immediately. Garnish with fresh mint.
