Hummus Recipe – How to Make Hummus

I have posted my family hummus recipe before, but I got a lot of questions asking me why my hummus does not come out as creamy as the hummus in the restaurant. The answer its all in the preparation and equipment. So I decided to write this post to satisfy those who desire to make hummus just like the one they get in the restaurant.
If I am making a small portion for the family I still like my (own family- easy to make Hummus recipe) the most, but it gets a little thicker when stored in the fridge for few days; So I only use the following method listed below if I plan to make a large amount and or if I plan to store in the fridge for few days.
Restaurant Hummus recipe:
Ingredients
- 2 cans chick peas
- 1/3 cup Tahini sauce
- ¼ cup fresh lemon juice
- 3 garlic cloves minced
- ½ teaspoon salt
- Vegetable oil (not Olive Oil)
- Olive Oil
- cold water
Instruction:
Drain and rinse the chickpeas and set aside. You can spend the time taking the little skins off each chickpea but it’s time consuming and, Yes it does make it a little creamier but I don’t think the time spent to do this step is worth it, may be the restaurants have lots of cheap labor.
Mash the garlic really good to a paste consistency.
Blend the Tahini with the lemon till it froth and smooth. This step is one of the keys to creamy hummus.
Now add the garlic paste and keep blending. I must mention that you need a good, heavy-duty not necessarily industrial grade Blender but you do need a heavier duty blender that is not going to overheat and go caput on you.
Start adding the chickpeas to the blender in small proportions and keep scraping the side; this will help in achieving the desired creamy consistency. Once all the chick peas are in, add a couple of Tbsp of cold water or more, then drizzle vegetable oil (not olive oil) if you use Olive Oil in this step it will significantly change the hummus taste, add the oil in small thin stream till you get the desired creamy consistency.
When done, scoop it in a dish and spread like the photo by putting the spoon off center in the dish and rotating the dish to create the shape in the picture. Now for taste and aesthetic add some optional paprika, chopped parsley. Drizzle Olive oil on top and enjoy a great scrumptious tasty treat from the Middle East.
If you want to go all out and use dried chick peas, you can but you need to soak them in water over night and then boil them and boil them and boil them, I some time use my Pressure cooker to get them so soft and tender, don’t forget to add salt and cumin to taste (before you close the pressure cooker).
