Recipe: Ribboned Vegetables: Best when zucchini and squash are in season.

Summary: : Ribboned Vegetables is a beautiful dish exploding with  zesty flavor. Very unique and surprising side dish to add to any menu. Try to make it when squash and zucchini are in season.  You can use use butter instead of oil.

Ingredients

  • 3 carrots
  • 3 zucchini
  •  3 yellow squash
  • 2 tablespoons vegetable oil
  •  3 teaspoons lemon juice
  • 1 teaspoon horseradish
  •  1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Using a vegetable a peeler, cut very thin slices down the length of each of the vegetables. In a large skillet sauté the vegetables for 2 minutes in oil. Stir remaining ingredients and cook for 4 more minutes. Stirring until the vegetables are crisp tender. Serve as side dish with chicken or steak.
